Origin uncertain. A great appetizer at all times and a most popular treat in Mexico's Cinco de Mayo celebrations.

Tinga is made with shredded chicken and onions simmered in a thick chipotle sauce served on crunchy tostadas (toasts.) It can be prepared with shredded beef or pork instead.

Please note that when you add some cotija (crumbly Mexican white cheese), cilantro, avocado and a squirt of lime, you've not only created a delectable dish, but you've also paid homage to the colors of the Mexican flag.
