After the turkey has already been cooked and is done.
I prefer to stuff the turkey just before baking. The stuffing will absorb the flavor of the turkey this way.
You should stuff it before it gets in the oven. When I help stuff chicken I put the spices in after everything else is in such as pepper, salt, and some Cajun and anything else I can find.
